Roc\u00edo Teruel, Doctor in food science and technology and R&amp;D Food Product Manager at QualityFry, and renowned chef Jes\u00fas Almagro, took a<strong> <u>theoretical-practical demonstration<\/u> <\/strong>to the Aragonese capital on the <strong>scientific and culinary processes <\/strong>through which <strong>intelligent frying<\/strong> is achieved.<\/p>\n<h5><strong>Intelligent frying applied to haute cuisine<\/strong><\/h5>\n<p>Together, both professionals presented the speech \u201c<strong>Intelligent frying applied to haute cuisine<\/strong>\u201d about how the <strong>automatic frying technology (<em>ecofry<\/em>)<\/strong> works, and how to use it correctly to obtain a product with excellent taste and texture. Roc\u00edo Teruel spoke about the different aspects of this culinary process and the advantages of transferring <strong>innovative technologies<\/strong> to cooking processes in the <strong>hotel<\/strong> and <strong>restaurant<\/strong> trade.<\/p>\n<p>The speech, which was accompanied by show cooking at the hands of chef Jes\u00fas Almagro, demonstrated in a practical way the viability of introducing <strong>intelligent frying<\/strong> to the professional kitchen by employing the suitable technology and equipment.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-8448 size-full\" title=\"Gastronom\u00eda-y-salud-Zaragoza-Intelligent-frying\" src=\"https:\/\/www.qualityfry.com\/wp-content\/uploads\/2021\/02\/Salud-y-Gastronomia_-QualityFry.jpg\" alt=\"Gastronom\u00eda y salud Zaragoza Intelligent frying\" width=\"900\" height=\"677\"><\/p>\n<p>The audience also had the chance to savour <strong>original fried recipes<\/strong> in line with the concept of <strong>healthy cuisine<\/strong> and with a <strong>low environmental impact<\/strong>.<\/p>\n<h5><strong>What is Intelligent frying?<\/strong><\/h5>\n<p><strong>&nbsp;<\/strong>The <strong>technology<\/strong> applied by <strong>QualityFry<\/strong> in its <strong>frying equipment<\/strong> <strong>automatically<\/strong> controls the variables of time, temperature and transit to achieve a high-quality end product. Their devices are characterised by the virtue of <strong>emitting no smoke or odours<\/strong>, as well as preventing the mixture of tastes in the products being fried. The cooking process with this <strong>technology<\/strong> reduces electricity consumption, frying time and oil consumption.<\/p>\n<p>This technology which introduces <strong>intelligent frying<\/strong> has been recognised by the <strong>European Commission<\/strong> and has received funding from the <strong>SME Instrument project Phase 2<\/strong> within the <strong><u>Horizon 2020<\/u><\/strong> Research and Innovation Framework Programme. The objective of SME Instrument is to promote, advise and fund enterprises which develop <strong>technologies and products<\/strong> aimed at improving productivity, <strong>energy efficiency<\/strong> and <strong>sustainability<\/strong>.<\/p>\n<p>The <strong>International Gastronomy and Health Congress<\/strong>, promoted by the Heraldo de Arag\u00f3n newspaper, has become an excellent platform to present innovations which contribute to <strong>healthy cooking in professional restaurants<\/strong>.
