Ingredients:

  • 1 eggplant

  • 4 garlic cloves

  • 1 tbsp of tahini

  • Juice of 1 lemon

  • Half a Greek yogurt

  • Extra virgin olive oil (EVOO)

  • Salt and pepper to taste

 

Step-by-Step Preparation:

1. Cut the eggplant into quarters and roast it at 150°C for 15 minutes. Then carefully remove the skin.

2. Roast the garlic cloves (with skin) at 150°C for 5 minutes. Peel and set aside.

3. Place all the ingredients in a blender and pulse, alternating with pauses, to achieve a more rustic texture.

4. Serve and optionally garnish with a drizzle of EVOO, pomegranate seeds, labneh, or an extra spoonful of yogurt.
