Garlic Prawn Croquettes

Shrimp croquettes with garlic

For the croquette
Ingredients: 500 grams of tapioca batter, 200 grams of cooked rice, 30 grams of onion, 50 grams of lime, 100 grams of stock, 10 grams of ginger, 50 grams of coconut milk, 50 grams of coriander, 2 grams of lime zest , 25 grams of shrimp, 10 grams of yellow pepper, paprika and salt.
- Pour a layer of tapioca batter into 7×2.5cm molds and let cool. After this we coat the croquette with flour, egg and the paprika coating.
- Chop the onion, ginger, coriander, shrimp and chili pepper and let it marinate for about 3 minutes.
- Add the tiger milk and marinate for another 2 minutes.
- Pour the macerated mixture into the molds with the tapioca batter, close and freeze for 5 or 6 hours.

Type of oil: Oleic high sunflower oil
Frying time in QualityFry: 2 min.
Frying temperature: 185ºC
Place the croquettes in the inlet hopper of your ventless deep fryer. Select the automatic frying program corresponding to 2 minutes and press ENTER. Wait for the fryer to notify you that those two minutes have elapsed and remove the fried and crunchy product from the output hopper ready to serve.
Assembly and presentation
Arrange the croquette on a plate, top with the tartar with the tiger milk, decorate with seasonal sprouts.
