Ingredients:

  • 1 octopus leg

  • 3 baby potatoes

  • Romesco sauce*

  • Extra virgin olive oil (EVOO)
  • Salt and pepper

  • Flour

Preparation step by step:

1. Start by confiting the baby potatoes for 10 minutes at 150°C.

2. Next, cut them in half and finish roasting at 180°C for about 3 and a half minutes.

3. On the plate, place a spoonful of romesco sauce and spread it in a teardrop shape following the direction of the octopus leg.

4. Place the roasted potato halves on top, slightly crushing them, and finish with the octopus leg. Drizzle with EVOO, sprinkle with La Vera’s paprika, and add some flake salt to taste.
