Ingredients:

  • 300 g of squid rings

  • 100 g of wheat flour

  • Lemon

  • Alioli

  • Cuttlefish ink with cooked cuttlefish

  • Flake salt

 

Step-by-step Preparation:

1. The first thing we’ll prepare is the squid ink aioli. Take the cuttlefish ink (if it’s not cooked, microwave it for a couple of minutes) and mix it into the aioli to enhance the flavor of the squid.

2. Dry the squid rings thoroughly and coat them in flour. Place them in the hopper and fry at 180°C for approximately 1:30 to 2:00 minutes (depending on the thickness of the rings).

3. Plate the Andalusian-style squid with small dots of aioli and garnish with lemon wedges.
