  • 1 kg of potatoes

  • Garlic powder

  • Fine salt
  • Spices

  • Sauces

Preparation step by step:

1. Start by thoroughly washing the potatoes and cutting them into uniform batons, approximately 6 × 6 mm.

2. Next, confit them at 140 °C using the 4:00-minute recipe. This makes them tender on the inside without browning, which helps them become crispier later.

3. Once confited, let them air-dry on absorbent paper. At this stage, season with fine salt and a pinch of garlic powder to enhance the flavor.

4. Finally, fry the potatoes at 180 °C using the 3:00-minute recipe, until golden and crispy on the outside. Serve immediately.
