Ingredients: 500 grams of lemon sponge cake, 20 grams of egg white, 35 grams of royaltin, lemon zest, orange zest, 110 grams of water, 90 grams of sugar, 20 grams of cocoa, 10 grams of liquid chocolate, orange syrup , 200 grams of grapefruit juice, 5 grams of powdered gelatin, ginger ice cream
- We prepare the batter for the sponge cake: mix the egg white with the royaltin (or broken ice cream cone) until it has a homogeneous consistency
- We prepare the chocolate sauce: Make a syrup with the water, 60 grams of sugar, the cocoa and the chocolate.
- For the broken grapefruit gelatin: Heat a little of the juice with the gelatin (previously hydrated in cold water) and mix with 30 grams of sugar. Let set cold.
- Cut the lemon cake into ingots and coat in the mixture previously prepared. Fry in QualityFry.
