Ingredients: 50 grams of soy sauce, 50 grams of cane honey, 50 grams of sweet chili sauce, 2 grams of pepper, 70 grams of mayonnaise, 8 grams of lime, 16 grams of flower honey, 1.5 grams of star anise, 15 grams of lemon juice

Directions:

  1. Bone the wings and marinate with the soy sauce, cane syrup, sweet chili sauce and pepper. Leave to marinate for at least 14-16 hours so that it acquires all the flavor.
  2. Emulsify the mayonnaise with the lime, flower honey, anise and lemon juice.
  3. Flour the wings and fry.

Type of oil: Oleic high sunflower oil
Frying time in QualityFry: 2:30 min.
Frying temperature: 180ºC

Place the wings into the inlet hopper of your QualityFry catering equipment. Select the automatic frying program corresponding to 2:30 minutes and press ENTER. Wait for the fryer to notify you that those two minutes have elapsed and remove the fried product. Depending on the browning we like and the desired crunchiness, increase or decrease the frying time.
