1. Start by cutting the asparagus evenly so they are all the same size. Place them in the hopper at 180°C for 1 minute.
2. Next, cook the presa steak at 180°C for 1 and a half minutes. If you prefer it more well done, extend the time slightly.
3. Remove the presa from the heat and let it rest for 2 minutes before slicing. This allows the juices to redistribute and the meat to become more tender.
4. For plating, spread a base of escalivada on the plate. Place the roasted asparagus on top of the escalivada and finally the sliced presa ibérica on top. Finish with a sprinkle of flake salt and a drizzle of extra virgin olive oil.
