At Quality Kitchen Academy, we bring you some practical tips for working with products that have crispy coatings, in this case, potatoes and sweet potatoes with dextrin. Today, we show you how to precook the food for later storage, thus optimizing work during peak demand times.

Preparation step by step:

One of the most important aspects to keep in mind is maintaining the cold chain. This way, we ensure that the product enters the machine perfectly loose, preventing it from sticking together or clumping during frying.

1.To start, we’ll perform a pre-fry that will help seal the coating and prevent the products from sticking to each other. Place the product directly from the freezer into the hopper, select the 2-minute recipe at 180°C, and let our QualityFry equipment take care of the rest. Once this first step is completed, we will have the product precooked and ready for storage. This allows us to optimize work during peak demand times, such as dinner services or events, since we’ll only need a quick final regeneration before serving.

2.For this step, we place the product back into the hopper and select the 1-minute recipe at 1 minute a 180 °C.

The result: a golden, crispy, and perfect coating, ready to surprise our customers.
